Broccoli with Sautéed Beef and Garlic

>> Saturday, March 12, 2011

Easy recipe, you can cook at home yourself. Tadaa...Broccoli with Sauteed beef and garlic. Sautéing is similar to stir-fry that uses a small amount of oil over relatively high heat. All ingredients are cooked at once and quickly.

Simple Ingredients :
Broccoli
Sliced beef
Finely Chopped Garlic
Half Onion
Olive Oil (or Cooking Oil)
Oyster Sauce

Beef : Cut thin slices. Marinate it for few minutes (if you are rushing like me). I normally just dump in, a pinch of salt, soy sauce, garlic, onion, ginger (you can opt this out), two tablespoons of water. I'm not sure why, but I somehow have this thought by doing that, the meat will absorb the taste of the ingredients and will taste better.

Broccoli : Blanch the broccoli, throw them in boiling water for few minutes - 2mins. Take out the broccoli and place them in ice water. Blanch means dip the food in boiling water, remove and put in ice water. This is to set the bright colour of the vege and also to preserve the crisp texture (it's not entirely cook yet). Blanch method can be used for asparagus too.

Saute : Two drops of olive oil, put in finely chopped garlic and onion. Stir-fry. Put sliced beef. Add 2-3 spoons of water. Put broccoli in. Cook for roughly 5 minutes depend on how tender crisp or soft you want it (the broccoli). Mix 1 spoon of oyster sauce (your preference).

Voila! Done. Easy huh? Simple and healthy home-cooked dish. (and Fast...)

Healthy Note : Health benefits of broccoli
  • Broccoli - rich in nutrients
  • Vitamin C, Vitamin A (beta-carotene) - important antioxidants
  • Folic acid, Calcium (great source for those who don't consume dairy products)
  • Linked to lower rates of cancer with two important phytochemicals (indoles and isothiocyanates). An isothiocyanate, called sulforaphane increases the activity of a group of enzymes in our body that suppress cancer-causing agents; strong in anticancer activity
  • Speeds up the removal of estrogen from the body, helping suppress breast cancer.
  • Rich in cholesterol-reducing fiber
  • Super source of chromium that helps regulate insulin and bloodsugar
